This delightful and colorful salad was inspired by the season of Autumn. This is the season of the year where autumn marks the transition from summer to winter, when the night becomes noticeably earlier and the temperature cool down. One of it natural beauty features is the shredding of leaves and the change of colors. The vibrant beautiful fall colors is stunning and you wonder how nature can transcend that beauty in the eyes of the beholder. I just love the fall weather. It is not as hot as summer yet not as cold as winter but somewhat cool and you must experience the fall drive in Ontario. The beauty is just stunning and the air is so fresh, crisp and breath taking. Autumn is associated with the season of harvest, when we reap what we planted in the Spring. It is time to gather nature's bounty; the fruits, vegetables, grains and nuts. We can eat with gratitude and yet we can preserve them for the coming cold winter months. It is the time of the year with abundance; the beautiful colorful pumpkin, different kinds of squash, apples, cabbage, brussels sprouts and carrots. I wanted to create an Autumn salad recipe, it just remind me of the beautiful fall color as I looked into my bowl. The beauty of each spoonful is that it reminds me to slow myself down from the hassels of life.
