After all the wonderful food over the holidays, we needed something simple and less rich. I love pork and beef meatballs but I haven’t tried ground chicken before. I got the recipe from Alton Brown’s cookbook but some of his suggestions, while I’m sure they would add more flavor, were more work than I wanted to take for a week-night dinner, so I simplified some of the steps. I used regular olive oil instead of steeping it with herbs. If you have time, or have flavored olive oil, I’m sure this recipe would be even better with a basil or rosemary infused olive oil, but we all thought they were pretty good without that step
