I discovered cinnamon chips at a bulk store on my way through Toronto one year. They became as instant hit in my already favourite oatmeal cookies. Chocolate chips are good too, but they are so yesterday. I have a hard time finding cinnamon chips in Canada, but they can be found online especially around Christmas. My most recent Cinnamon chips were sent by a very good friend from Florida. He is the greatest! My secret for great cookies is a stiff dough, put in the fridge to make it cold before baking.
