I can not eat another peach cobbler this summer, but what to do with all the wonderful peaches we have in the sandhills. Mark Elliott of Elliotts on Linden suggested a relish which I adapted from his recipe. Everything I have ever tried at this restaurant is wonderful, so I knew I couldn't go wrong. I changed some of the ingredients and then added Natalie's favorite, sriracha. The sweetness from the peaches combined with the spicy sriracha made this the perfect summer salsa.
