This is another recipe that was never written down until I needed to teach the chefs in Cyprus how to create Thanksgiving dinner for our American Students on Thanksgiving. So, naturally, I went back to my mom and watched her more carefully. We never had mushrooms or oysters in our stuffing. Mom always used Peppridge Farm stuffing mix. It is still the way I think a stuffing should taste. This has nothing to do with right or wrong but simply memories of holidays gone by.
