Now Eggs Benedict is not that hard to make if you get the Hollandaise Sauce down. This recipe comes from Colgate Camp. Mrs. Whitney’s version substituted Deviled Ham for the more traditional slice of baked ham or Canadian bacon. Although not classic, it was this first and most memorable version of the classic dish that encouraged me to learn to make Hollandaise and later the various breakfasts for my mom. I suspect that Mrs. Whitney switched to powdered "Instant" Hollandaise along the way, but never had the courage to ask.
