This is a Cypriot national dish that is sometimes eaten in Greece. Souvla translates as skewered meat. Souvlaki (that you get at any Greek sandwich shop) simply uses the diminutive "aki" to refer to "little souvla". Every person who cooks souvla in Cyprus will have an opinion on the proper charcoal/wood to be used; how much to be used and whether or not to add wine. Timing is everything. Every Cypriot family has a souvla charcoal grill. This is a rectangular charcoal grill, about 36" long, with room for 2 or 3 long skewers or a dozen short skewers, all driven by a small D-cell motor.
