This is one of our favorite recipes. I comes down from my mother-in-law through my wife. It is simple to prepare, reheats beautifully, and represents an interesting blending of flavors. It can be adjusted with herbs in both the eggplant and the beef. You can substitute chicken stock for white wine. All in all, a very versatile dish.
