Souvlakia - kebab
Souvlakia in Cyprus is often paired with Sheftalia as a "Mixed" sandwich. The "ia" at the end of the name represents the diminutive form - meaning small version. So souvlakia is simply a small souvla. Souvla basically means kebab, so souvlakia are small kebabs. As you can see in the image, Cypriots use a long rectangular grill with a small D Cell motor to turn roughly 11 of these small kebabs across the small side of the grill. The same setup can be used for big Souvla skewers across the long side of grill.
