Oh how I loved this salad! Butter lettuce is so light and delicate but it held up well with the avocado, cucumber, red onion, radish, toasted pine nuts, and shaved parmesan cheese. I tossed this light salad with a homemade tangy lemon vinaigrette that paired nicely with the veggies and the rest of the meal.
