You must try this Cowboy Caviar Salsa !  I eat it plain or with tortilla chips.  It makes an excellent summer side dish or appetizer.  You could also through it on some cooked white rice and add grilled chicken or fish for a fresh summer salad!   This is seriously the best salsa on the planet.
