Barbacoa
Now this isn???t the barbacoa found in U.S. Mexican restaurants, this is the real thing, a whole cow???s head, pit barbecued , then put on a giant round tray where the lovely cooks have pulled the meat partially from the bone to fill up the tray with the tender meat. Below is a basic recipe. We didn???t dig a hole, we had a concrete lined pit to roast the head in (one gets tired of digging holes.)
