Southwestern egg rolls are pretty much the best invention ever. And they simple(ish) to make. Especially if you have a partner-in-crime (see husband-turned-blog-hand-model pics below).  I guess technically these aren't egg rolls. More like tortilla rolls. But whatever. Why do I love them? The taste and texture explosion that happens with every bite. Crunchy outside
