One thing I fell in love with during  my three week visit to the Philippines was this buko pandan salad, a dessert made with gelatin cubes and tender young coconut in pandan-infused cream. I fell so hard that everyday, I would pass by a restaurant specializing in meriendas to buy a small tub or two
