While this isn’t very “Christmas-y” it is seriously delicious and makes enough to feed 2 for a few meals. It is cheesy goodness. A southwest style lasagna, just build with corn tortillas and the filling and bake.   Scott had about 3 serving of this and ate it for lunch for the next few days.
