Recipe updated 27/09/2015: An alternative method is to melt the butter and whisk together with the sugar and egg, before stirring through the rest of the ingredients with a spatula. It makes for a slightly more rustic looking cookie but is a good option if you can't be bothered with getting out the electric beaters. And they still have great flavour and chewiness!
