Borscht (Barszcz) Polish Beetroot Soup
Borscht (Barszcz) is a simple clear beetroot soup that gets a touch of sourness from lemon or vinegar. It is excellent warm with boiled carrots or chilled with rye bread. Other beetroot soups traditionally obtain sourness from the kwas(fermented bread). This soup is usually served with small ear shaped mushroom dumplings for Polish Christmas Eve
